I think as technology evolves, new niches spawn automatically. Like, five years ago, nobody was making videos critiquing the acoustics of virtual reality rooms.

Nostalgia is the ultimate driver. Look at the channels dedicated solely to playing old Windows 95 installation sounds or CRT TV static.
That nostalgia hits different. People pay good money for old CRT monitors now just to play retro consoles the "authentic" way.
 
It’s pure preservation art at this point. They’re basically digital archivists keeping history alive.
